
Award-winning chef opens farm-to-table restaurant in historic Liverpool building, championing local producers and seasonal British ingredients.
Liverpool's culinary landscape is set for a shake-up as acclaimed chef Daniel Foster opens his first independent restaurant, Harvest & Hearth, in a beautifully restored Victorian warehouse in the Baltic Triangle.
Foster, who previously earned a Michelin star at London's The Garden Room, has returned to his hometown with a clear vision: to celebrate the best of local British produce while minimizing environmental impact. The 60-cover restaurant will source ingredients exclusively from farms and suppliers within a 50-mile radius.
"I've spent years working with incredible produce from across the country, but there's something special about showcasing what's available right here on our doorstep," Foster explained during a preview event. "Lancashire lamb, Cheshire cheese, seafood from the Irish Sea – we're surrounded by world-class ingredients."
The menu will change monthly to reflect seasonal availability, with dishes designed to highlight the natural flavours of each ingredient. Foster has already established partnerships with 15 local farms and producers, many of whom will be featured on the restaurant's website to tell their stories.
The restaurant's interior pays homage to the building's industrial heritage, with exposed brickwork and steel beams complemented by warm lighting and locally crafted furniture. A private dining room for 12 guests overlooks the open kitchen, allowing diners to watch the culinary team at work.
Sustainability extends beyond the menu, with the restaurant implementing a zero-waste policy in the kitchen, composting food scraps, and using only renewable energy sources. Even the wine list focuses on organic and biodynamic producers.
"We want to prove that fine dining can be both exceptional and responsible," said restaurant manager Claire Watson, who previously worked at several acclaimed UK establishments. "Every decision we make considers our impact on the local community and environment."
Harvest & Hearth officially opens on February 14th, with reservations already filling up rapidly. Foster has hinted at plans for a sister venue focusing on more casual dining if the restaurant proves successful.
